Its pulp is too sour to eat, so the fruit is produced solely for the extraction of essential oil from the peel. It is not possible to grow Bergamot trees from seed. Instead, young shoots are grafted onto rootstock of other citrus species such as bitter orange or lemon, to propagate new trees.
For centuries, Bergamot was an important remedy in Italian folk medicine as an antiseptic and to reduce fevers. Many people are aware of its aroma due to the fact that it is used to flavour Earl Grey Tea and was used for years in the traditional production of Eau De Cologne.
